It's your stomach's acid, not the coffee's
Almost everything written about this blames coffee's acidity. Check the numbers and that explanation falls apart.
Brewed coffee sits around pH 5. Orange juice is near 3.5. Cola is about 2.5. Your own stomach acid runs between 1.5 and 3.5 — meaning it is dramatically more acidic than the coffee you just poured into it. A liquid at pH 5 entering an environment at pH 2 does not meaningfully change the acidity of that environment.
What coffee genuinely does is stimulate your stomach to secrete more acid. It triggers the release of gastrin and cholecystokinin, hormones that increase gastric acid production and drive involuntary contractions through your digestive tract. That's the actual mechanism, and it's a physiological response rather than a chemical one.
Two things follow. First, low-acid coffee addresses the wrong variable — it's changing the pH of the input, not the response it provokes, which is why so many people find it doesn't help. Second, decaf can still do it, because the acid-stimulating effect isn't purely about caffeine.
The same mechanism explains the other well-known effect: around one in three coffee drinkers report an urge to go to the bathroom afterwards, usually within four to thirty minutes.
